Wild Asparagus with Eggs

Ingredients
- 200 g wild asparagus (or thin green asparagus)
- 4 eggs
- 1 small onion (optional)
- Olive oil
- Salt and pepper to taste
- A splash of water or milk (optional, for fluffier eggs)
- Bread or toast for serving
Preparation

Wash and trim the woody ends off the asparagus. Cut into short pieces (approx. 3–4 cm).

In a skillet, heat olive oil and sauté chopped onion (if using) until soft.

Add asparagus and a few tablespoons of water. Cover and steam for 5–6 minutes until tender.

In a bowl, beat the eggs and season with salt and pepper.

Pour the eggs into the pan and stir gently until cooked to your preferred consistency — soft or fully scrambled.

Serve warm with rustic bread or toast and a drizzle of olive oil.
