Istrian Fritule
PREPARATION TIME: 40 minutes
DIFFICULTY: Easy
Ingredients
- 400 g all-purpose flour
- 2 eggs
- 2 tablespoons sugar
- 1 packet dry yeast (or 20 g fresh yeast)
- 150 ml warm milk
- 1 shot of rum or rakija
- Grated zest of 1 lemon or orange
- A handful of raisins (optional, soaked in rum)
- Pinch of salt
- Powdered sugar (for dusting)
- Oil for frying (sunflower or similar)
Preparation

In a bowl, dissolve yeast in warm milk with a pinch of sugar. Let rest for 10 minutes until foamy.

In a large bowl, mix flour, eggs, sugar, zest, rum, and salt. Add yeast mixture and stir until smooth and sticky. Add raisins if using.

Let the batter rest for 20–30 minutes in a warm place until slightly risen.

Heat oil in a deep pot. Using two spoons or your hands, drop small balls of dough into the hot oil.

Fry until golden brown on all sides. Remove and drain on paper towels.

Dust with powdered sugar and serve warm.
