Boškarin Stew
PREPARATION TIME: 2.5 – 3 hours
DIFFICULTY: Moderate
Ingredients
- 800 g boškarin beef (or high-quality stewing beef)
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 1 celery stalk, chopped
- 2 tablespoons tomato paste
- 200 ml red wine (Teran)
- 500 ml beef or vegetable stock
- 2 bay leaves
- Olive oil or pork fat
- Salt and pepper to taste
- A pinch of rosemary or thyme (optional)
Preparation

In a large pot, heat olive oil and sauté onions until golden. Add garlic and celery, then stir for a few minutes.

Add cubed boškarin beef and brown on all sides.

Stir in tomato paste and deglaze with red wine. Let simmer until most of the wine evaporates.

Add carrots, bay leaves, stock, and herbs. Cover and simmer gently for 2–3 hours until the meat becomes tender. Stir occasionally.

Season with salt and pepper. Serve with polenta, mashed potatoes, or Istrian pasta.
