Peperonata (Istrian Style)
PREPARATION TIME: 10 minutes prep + 25 minutes cooking

Ingredients
- 3 bell peppers (red and yellow), sliced into strips
- 1 large onion, thinly sliced
- 2 garlic cloves, minced
- 2 ripe tomatoes, chopped (or 4 tbsp tomato passata)
- 3 tablespoons olive oil
- Salt and pepper to taste
- Optional: a splash of vinegar or pinch of sugar for balance
- Optional: fresh basil or parsley for garnish
Preparation

In a large pan, heat the olive oil over medium heat.

Add sliced onions and cook gently until soft and translucent.

Stir in the garlic and cook for 1 minute until fragrant.

Add bell pepper strips and cook for about 10 minutes, stirring occasionally.

Add chopped tomatoes or passata, season with salt and pepper.

Cover and simmer on low heat for 15 more minutes, until everything is tender and well combined.

Taste and adjust with a splash of vinegar or a pinch of sugar if needed.
