Prežganka (Istrian Browned Flour Soup)
PREPARATION TIME: 5 minutes prep + 10 minutes cooking
DIFFICULTY: Easy
Ingredients
- 2 tablespoons all-purpose flour
- 1 tablespoon olive oil or butter
- 1 clove garlic (minced or whole, optional)
- 500 ml water or light broth
- 1 egg
- Salt and pepper to taste
- Optional: caraway seeds or a pinch of dried marjoram
Preparation

n a small pot, heat olive oil or butter over medium heat.

Add flour and stir continuously to make a roux – cook until golden brown and fragrant (be careful not to burn it!).

Add garlic and cook briefly (optional).

Slowly pour in water or broth while whisking to avoid lumps. Bring to a boil.

Beat the egg in a separate bowl, then slowly drizzle it into the soup while stirring to form soft strands.

Season with salt and pepper. Add herbs if desired.

Simmer for another 2–3 minutes and serve hot.
