Istrian Maneštra

Ingredients
- 250 g dried beans (e.g. pinto or cranberry beans), soaked overnight
- 2 potatoes, diced
- 2 carrots, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 celery stalk, chopped
- 100 g corn (optional, depending on regional variation)
- 100 g cured pork (bones, pancetta, or prosciutto rind)
- 1 tablespoon olive oil
- Bay leaf
- Salt and pepper to taste
- Water or light vegetable broth (about 1.5 L)
Preparation

In a large pot, heat olive oil and sauté chopped onion, garlic, and celery until soft.

Add the cured meat and let it brown lightly to release flavor.

Add soaked beans and enough water to cover. Bring to a boil, then reduce to a simmer for 30 minutes.

Add diced potatoes, carrots, bay leaf, and corn (if using). Continue simmering for another 45 minutes, or until beans and vegetables are tender.

Adjust seasoning with salt and pepper. Let rest a few minutes before serving.
