Fuži with Truffles
PREPARATION TIME: 30–40 minutes
DIFFICULTY: Easy
Ingredients
- 400 g fresh Istrian fuži pasta (or tagliatelle if unavailable)
- 1–2 fresh black or white truffles (or ~30 g truffle shavings)
- 2 tablespoons butter
- 200 ml heavy cream
- 2 cloves garlic (optional)
- Salt and pepper to taste
- Parmesan cheese (optional)
Preparation

Bring a large pot of salted water to boil and cook the fuži pasta until al dente.

While the pasta cooks, melt the butter in a wide pan over low heat.

Add finely grated or thinly sliced truffle to the butter. Stir gently. (You can add garlic here if using.)

Pour in the heavy cream and stir until the sauce thickens slightly — don’t boil.

Drain the pasta and toss it into the pan with the sauce. Mix gently to coat evenly.

Season with salt and pepper. Serve immediately with fresh truffle shavings on top. Add Parmesan if desired.
