Asparagus Frittata
PREPARATION TIME: 10 minutes prep + 15 minutes cooking
DIFFICULTY: Easy
Ingredients
- 6 eggs
- 200 g wild asparagus (or thin green asparagus), chopped
- 1 small onion or shallot, finely chopped
- 2 tablespoons olive oil or butter
- 2 tablespoons grated cheese (Istrian sheep cheese or Parmesan)
- Salt and pepper to taste

Preparation

In a bowl, whisk the eggs with salt, pepper, and grated cheese.

In an ovenproof skillet, heat olive oil or butter and sauté the onion until soft.

Add the chopped asparagus and cook for 3–5 minutes until tender.

Pour the egg mixture into the pan and let it cook undisturbed over low heat until the edges set.

Finish under the broiler (or in a 180 °C oven) for 5–7 minutes, until the top is firm and slightly golden.

Let cool slightly, slice, and serve warm or at room temperature.
