Gratinated Oysters
PREPARATION TIME: 10 minutes prep + 5 minutes cooking
DIFFICULTY: Easy
Ingredients
- 12 fresh oysters
- 2 garlic cloves, finely chopped
- 3 tablespoons breadcrumbs
- Handful of fresh parsley, chopped
- Salt and pepper to taste
- 50 g grated Parmesan cheese
- Lemon wedges, for serving
Preparation
Rinse the oysters under cold water to remove any grit. Steam them for about 2 minutes until they open. Discard any that remain closed.
Once cooled, carefully shuck the oysters and place the meat back into the bottom shell.
Preheat your broiler to high (around 250 °C / 480 °F).
In a small pan, sauté the garlic in a bit of olive oil or butter. Stir in the breadcrumbs, chopped parsley, salt, and pepper.
Spoon a small amount of the mixture over each oyster and top with grated Parmesan.
Place the oysters under the broiler for 2–3 minutes, until the tops are golden and bubbly.
Serve immediately with lemon wedges.
Now you’ve made Istrian-style Gratinated Oysters — savory, aromatic, and the perfect way to enjoy the Adriatic’s finest shellfish. Pair with a chilled glass of Malvazija for a true coastal experience.
