Cuttlefish with Beans
PREPARATION TIME: 20 minutes prep + 40 minutes cooking
DIFFICULTY: Medium
Ingredients
- 500 g cuttlefish, cleaned and chopped
- 300 g young (fresh or frozen) beans
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 100 ml dry white wine
- 1 tablespoon tomato paste (optional)
- Bay leaf
- A few sprigs of fresh parsley, chopped
- Salt and pepper to taste
Preparation
In a pot, heat olive oil and sauté the onion until translucent.
Add the garlic and chopped cuttlefish, stirring for a few minutes until the cuttlefish releases its juices.
Pour in the white wine and let it simmer for 5 minutes to reduce.
Add the beans, bay leaf, and tomato paste if using. Mix well.
Cover with water (just enough to submerge the ingredients), season with salt and pepper, and cook over medium heat for about 30–40 minutes, until the beans and cuttlefish are tender.
Sprinkle with chopped parsley just before serving.
Serve warm with a slice of crusty bread or polenta.
Now you’ve created Cuttlefish with Beans - a rustic Istrian dish that blends the freshness of the sea with the earthiness of garden beans, often enjoyed during spring fishing festivals along the coast.
