Istrian Flatbread
PREPARATION TIME: 2.5 hours (including rising)
DIFFICULTY: Moderate
Ingredients
- 500 g all-purpose flour
- 1 packet dry yeast (7 g)
- 250 ml lukewarm water
- 2 tablespoons BUŽA olive oil (plus more for drizzling)
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 small red onion, finely sliced
- 1 tablespoon chopped rosemary or thyme (optional)
- Coarse sea salt for topping
Preparation

In a bowl, dissolve yeast and sugar in warm water and let rest for 10 minutes.

In a large bowl, combine flour and salt. Add yeast mixture and olive oil, then knead into a smooth dough.

Cover and let rise for 1 hour in a warm place.

Preheat oven to 200°C. Roll the dough into a flat round shape and place it on a baking tray.

Press thin onion slices gently into the dough. Optionally, add rosemary or thyme. Drizzle generously with olive oil and sprinkle with coarse salt.

Bake for 25–30 minutes until golden. Serve warm with cheese, prosciutto, or alone.
