Ombolo Sausage with Sauerkraut
PREPARATION TIME: 10 minutes prep + 30 minutes cooking
DIFFICULTY: Easy
Ingredients
- 600 g homemade sausage (ombolo or traditional Istrian sausage)
- 500 g sauerkraut (rinsed if very sour)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 100 ml dry white wine
- 150 ml vegetable or meat stock
- 1 bay leaf
- Fresh ground black pepper to taste
- Optional: 1 teaspoon sweet paprika
Preparation
Slice the sausage into thick rounds.
In a large pan or pot, heat the olive oil and sauté the chopped onion over medium heat until soft and translucent. Add the garlic and cook for another 30 seconds until fragrant.
Add the sausage slices and lightly brown them on both sides. Pour in the white wine and let it simmer for 2–3 minutes to reduce slightly.
Stir in the sauerkraut, stock, bay leaf, pepper, and paprika if using. Mix well, lower the heat, cover, and simmer for about 20 minutes, allowing the flavors to combine.
Adjust seasoning if necessary and remove the bay leaf before serving.
Serve hot, perfectly paired with boiled potatoes, crusty bread, or creamy polenta. Ombolo Sausage with Sauerkraut is a hearty, comforting dish that celebrates the authentic flavors of Istrian cuisine.
